Cheeky Chinese Chicken Dippers

 3 Cloves of Garlic / Small Piece of Ginger / 2 Red Chilis (deseeded) / 6tbsp Sweet Chilli Sauce / 1tbsp Light Soy / 1 Lime / Fresh Coriander

BEFORE heating oil in wok prepare sauce ingredients

FINELY chop garlic

PEEL and mince up ginger

DESEED chilies

MEASURE out sweet chilli sauce and soy sauce

HEAT oil in wok

DEEP FRY chicken

REMOVE chicken and hot oil from wok saving a tablespoon of frying oil

WIPE out wok and return to heat

DROP a tablespoon of oil back in wok, heat until it starts to smoke

ADD chili, garlic and ginger and stir for 30 seconds

THROW in soy and sweet chilli sauce

STIR and add juice of the lime

RETURN chicken to wok and coat in sauce

ADD chopped coriander and serve
