Sweet As Corn Fritters
150g Plain Flour / Baking Powder / Salt / 3 Corn Cobs / 4 Spring Onions / Bunch of Cilantro (Coriander) / 1 Egg / Ground Cumin / Ground Coriander / Oil / Water / Sweet Chili Sauce
SIEVE flour into large bowl
ADD 1/4 teaspoon baking powder/coriander, 1/2 teaspoon cumin
THROW in a pinch of salt
LIGHTLY beat egg and add to 125ml water
POUR mix into large bowl and beat into a smooth batter
SET aside
SLICE kernels from corn cobs
CHOP spring onions and bunch of cilantro
COMBINE corn, onion and cilantro into batter
HEAT around 60ml of oil in frying pan
SPOON mixture into hot oil and flatten slightly
FRY for 2-3 minutes
TURN and cook the other side
SERVE with sweet chili sauce
